I've always preferred the visual approach to shaping drum hits or any sounds for that matter and think it's a great way to mix hen you want things to sit together well in terms of their shape and transients - I don't personally know of anything else that I can use for that. I tried to shape drum hits with in-DAW envelopes but they're not too flexible in Ableton unless you go in clip envelopes and if you're not entirely sure what you might want, it's uninspiring to have to draw stuff in. But even on a full loop, you can change the feel of the rhythm by adding certain things over the course of the beat. I was gonna say about that too although a quick look at the vid you posted there has him using a number of them for that kick, I haven't actually done that myself, 2 or 3 is where I've stopped although I tend to freeze / flatten as I go anyway so probably forget.
